Pale wholemeal flour milled from khorasan grain, a rare wheat species related to modern varieties. Excellent for baking gourmet breads and pasta.

Kamut® grain is a khorasan wheat, triticum turgidum. Said to be the wheat of the Pharaohs, the crop produces bold golden ears of grain with striking long back awns or whiskers.

Kamut® khorasan flour makes great bread, pasta, pizza and biscuits and is part of our range of heritage and speciality flours. Khorasan wheat, triticum turgidum, is a hard wheat type whose origins can be traced back to the Fertile Crescent in Egypt where it is thought early agriculture first developed. With large golden grains, twice the size of many modern wheat varieties, it mills into a soft wholegrain flour with a pale, creamy colour. The Kamut® trade mark was introduced in 1990 to protect and preserve the exceptional quality of this ancient wheat and indicates that licensed seed was grown by organic farmers in North America and the flour was processed under Kamut® certification.

Instructions

Baking with Kamut® Khorasan Flour
Kamut® khorasan flour can be used in your favourite wholemeal recipes and bakes great bread, pasta and biscuits with a very pale brown colour.
Kamut® Khorasan Bread
Close in texture, light in colour, you could be forgiven for forgetting that this is a wholegrain loaf. Kamut® flour sometimes requires more liquid than wheat flour so adjust the water if necessary to ensure the dough is not too stiff.
Oven 220°C/Fan 200°C/425°F/Gas 7
500g Kamut® Khorasan Flour
1/2tsp Salt
1tsp Quick Yeast
1tsp Sugar
375ml Warm Water
2tbsp Oil
1. In a large bowl mix together the flour, salt, quick yeast and sugar.
2. Add the water mixing roughly then bring the dough together.
3. Knead vigorously then cover the bowl with a cloth and wait for the dough to double in size (about an hour).
4. Punch back the dough, add the oil then knead until the oil has been incorporated.
5. Shape the dough to fit and place in an oiled 1kg/2lb bread tin.
6. Cover & leave dough to rise for about 25 minutes in a warm place.
7. Bake in a preheated oven for 35/40 minutes.
Kamut® Khorasan Shortbread
Simple to make, these biscuits are delicious eaten on their own, and can make an elegant addition to a special creamy dessert or yoghurt, or with coffee after a meal.
Oven 150°C/Fan 130°C/250°F/Gas 2
150g Butter
125g Demerara Sugar
175g Kamut® Khorasan Flour
1tbsp Caster Sugar
1. Smear butter around the inside of a 18cm/7" round cake tin.
2. In a bowl cream the butter & Demerara sugar together until light and fluffy.
3. Add the flour & beat well.
4. Using your fingers bring the mix into a smooth ball of dough.
5. Press the dough into the cake tin, smooth the top and sprinkle with caster sugar.
6. Using a fork prick concentric circles of holes into the dough.
7. Bake in a preheated oven for 60-65 minutes.
8. Remove from the oven and carefully slice into thin wedges. Leave in the tin until quite cold.
Kamut® Khorasan Pasta
Kamut® flour makes excellent homemade pasta dough for you to transform into tagliatelle, linguine and other pasta shapes.
200g Kamut® Khorasan Flour
2 Large Eggs
50g Kamut® Khorasan Flour for dusting
1tsp Salt
1tbsp Olive Oil
1. Mix together the flour and eggs to form a smooth dough.
2. Cut the dough into pieces and pass it through a pasta machine, dusting the dough and rollers with the additional flour. Alternatively roll out the dough on a well floured surface and cut into strips.
3. Rest your pasta on a flour dusted surface until required.
4. Add salt to a large pan of water and bring to a vigorous boil.
5. Add pasta & continue boiling for 3-12 minutes (depending on the thickness of the pasta) until cooked.
6. Drain the pasta, add the oil and serve.
